Pop's Favorite Bread


Irish Soda Bread

Pop's favorite bread? Pop = soda, get it?


It took a lot of words to describe making bagels. This Irish Soda Bread is the exact opposite. Including baking time of 50 minutes, this bread took only an hour to make from start to finish. Quick, easy, with simple ingredients. This was a fun addition to our breakfast and was soooo easy to make out of just a couple of basic ingredients. Did I mention that there was no time needed to let the dough ride.


Here we go, first the ingredient list:

- 4 cups all-purpose flour

- 1 tsp baking soda

- 1 1/2 tsp salt

- 2 cups of buttermilk**


**NOTE: Unless you're a fan of buttermilk (I'm not) you can make a quick and easy substitute for buttermilk by using 1 tsp of lemon juice for each 1 cup of milk. That's what I did and it worked fine.


Okay, hang on! This will go fast. All of the dry ingredients were blended together in a mixing bowl using a fork. Then the buttermilk was added and mixed vigorously with a fork until the mixture started to come together and looked and felt like dough. The dough was then scooped out of the mixing bowl and placed onto a countertop that was dusted with flour. Kneading? Yep. Why didn't I use the electric mixer with the dough hook? Because this dough was only kneaded for one minute! I like that part of the recipe a lot!



The dough was formed into a disk about 6 inches across and placed into a greased glassed pie pan. The recipe said to slice a 1/2 inch deep X across the top of the dough but I'm here to tell you that doing a nice neat slice in this sticky dough was not successful at all. Then it went into a preheated 375 degree oven for 50 minutes. The timing worked perfectly and at the end of 50 minutes the bread had the perfect golden brown color it was supposed to have.



After cooling on a rack for a few minutes the bread was ready to be sliced and it was delicious! Because there's only a little fat (from the buttermilk) in this bread it will only store for about a day before getting as hard as a rock. We didn't have that problem since it was eaten by the family in one meal. It is an awesome bread that is solid and could have jam easily spread on it without falling apart. I'm told it is also good for dunking.



I love how quick and easy this came together. It'll definitely be a go to bread when we'd like some hot fresh bread without a lot of fuss.
