Grilled Pork Chops a la Baldy's New Mexico Green Chili Blend

Just as grilling season is coming to an end (yeah, its 28 degrees while I'm typing this) I've come across a wonderful local spice company -- Baldy's Blends -- with a large selection of spice mixes that I've wanted to try using as a rub. For my last weekend BBQ I decided that it would be a perfect time to try Baldy's New Mexico Green Chili Blend.


Nothing complicated here -- meat, spice, and fire. Ta da! That's all that's needed for a great simple barbeque, right? I generously coated the pork chops with the spice blend and let them sit for a couple of hours before taking them out to the grill.


I like starting out with the meat over a fairly high heat to put on a nice sear and add those lovely grill marks and then finished the cooking over a medium high heat. I suppose you could use a meat thermometer but with chops like these I like to go by feel to tell when they are done. Easy to do when you think about it -- floppy and mushy when completely raw and as hard as a piece of cardboard when well done.


These had wonderful flavor and everyone at our family dinner loved them. Baldy's Blends has a bunch of splice blends that we've been trying (baked potatoes, rice, etc.) and will continue using. If you'd like to try some, you can find them at https://baldysblends.com/

Lots of flavor, a little spice but nothing painful -- New Mexico Green Chili Blend was a home run.


I suppose it need to go back to making some more challenging dishes but it has been fun to take a bit of a break and cook some quick, simple, and tasty meals lately. Hope you've found something tasty that you enjoy and, if so, that you will share it with me!
