Smoked Avocado "Bombs"

When we think about bombing something it usually has negative connotations. Bombing a test, for example, is not a good thing. I've learned that it means something different when combined with avocados. These "avocado bombs" include avocados, cheese, and bacon -- three of the essential food groups that make just about anything taste good. Combing them in a smoker and you have the perfect combination. Not sure if smoke and heat should be called "heavenly" this was certainly out of this world.


Avocado Bombs were very simple to prepare. I used four avocados that were split in half, had the pit removed, and were then scooped whole from their skin/shell. A quick thought regarding avocados: After all these years, wouldn't you think the makers could come up with a different toy to put inside besides a wooden ball?


I placed a perfectly trimmed chunk of mild cheddar cheese where the pit used to be and then put the two halves back together. The reassembled halves were then wrapped with a layer of hamburger, depending on the size of the avocado it takes about 1/4 pound or a little bit more. The hamburgers was pressed together all the way around to evenly cover the avocado.

Once the avocado was wrapped in hamburger, I evenly coated it with a generous sprinkling of a BBQ spice rub and then completely wrapped it with bacon. There really wasn't any need to do a fancy weaving of the bacon but I'm sure you could if you were more creative than I. The bacon pretty much stuck to itself and as it cooked in the smoker it firmed up and held the shape without any problem at all.

I placed them in the smoker at about 275 degrees for about 90 minutes and used apple wood chips. That was all there was too it! I laid in my hammock while they cooked in the smoker and enjoyed the occasional whiff of smoke that blew in my direction.


When they came out of the smoker they were truly things of beauty. I'd intended to brush them with a coating of BBQ sauce for the last 15 minutes but they were amazing as is. We did have a vegetable side dish with it -- smoked cabbage which I'll write about in the next post. As I said at the beginning - cheese, bacon, avocados, and smoke. What more could you want?


If you don't have a smoker you could probably make them on a grill with pretty good results. Hmmm, maybe I should try that and find out?
